Ellsworth Locker is family owned & operated by Brian & Kathy Chapa. Brian purchased the business on June 1st, 1982. At that time, it did custom processing of beef, hogs and venison, and only made four types of sausages.Brian married Kathy in 1984, and they have three children: Travis, Tyler, and Emily.
Many changes have taken place over the years, including building updates, new coolers, freezers, and other quality equipment to accommodate the growing business of custom processing and creating new sausage products.
Today, we make over 140 different types of sausages, including the original four. Several of our products have won State and national awards!
